French Beans and Rocket salad with Black Currant Dressing




Picked some yummy French Beans the other day and couldn't think of anything better to make for lunch than a delicious salad, using some of the black currants juice we made a couple of days ago as dressing. Served it with some roasted cashews and lemon zest.

Boil French beans until tender. In the meanwhile, roast the nuts. Let cool. Mix with salad. Prepare dressing (pretty much like you would make raspberry dressing, but just replacing the raspberries with black currants and/or some black currant juice. Depending on how sour the black currants are, you may need to add a bit more sugar.

Here is recipe for basic raspberry dressing:

1/3 c. oil
3 tbsp. sugar or 1.5 tbsp honey/agave nectar
2 tbsp. red wine vinegar
1 tbsp. sour cream
1 1/2 tsp. Dijon mustard
1/2 c. mashed raspberries

Ps. If you would like a more filling salad, add some grilled chicken, tuna or feta cheese.
