Easy Beef and Vegetable Stew

Root vegetables, stewing beef and not much else could be found in the fridge this evening.
Having no choice, I made beef stew... what else ?!

However, i did try to make it a bit more exciting by adding some interesting flavours to it...

Ingredients:
Stewing beef
Parsnips
Carrots
Onions
Garlic
Ginger
Bayleaves
Orange
Stock (unsalted)
Celery
Can of plum tomatoes
Rosemary
Water
Black Pepper

Sorry, no quantities specified but the idea is to just brown the meat, onion and garlic, add whatever chopped vegetables and seasoning you may have and cover with stock. Bring to boil, cover and simmer until meat is tender. About 40 mins.

I strongly advice you add an orange,as it gives lovely taste to the stew. Just cut in quarter, squeeze in the juice and put the rest in before adding stock.

For toddlers, cut the beef into small pieces before serving. Serve with rice and/or bread.

Ps. it is amazing how all those "unwanted" veggies taste so good in a stew ! A great way to clean out the fridge.
